The Beijing Municipal Health Inspection Bureau said they will use mice to test alcohol, milk, salad, rice, oil, salt and seasonings...and in that order.

Of course, after the mice test the booze, they will lose sensation in their palates and the rest of the results will make no sense. But..the mice will be happy.

Food will be tested 24 hours prior to serving and if there is any poisoning, the mice should react within 17 hours. That gives the cooks 7 hours to do their thing.

Food at the games will be Western Style, complemented by Chinese food. The Chinese have a dish called 'drunken chicken.' Perhaps by the time the games are over they will be serving drunken mice as well.

Health inspectors will receive training on management and inspection techniques. There are 2 million mice who have lined up volunteering to be testers, too.
